Located on the eighth floor of The Adolphus, Sushi by Scratch can be accessed via the main guest elevators which open to a door marked only by a doorbell and a small metal plaque that reads “please ring bell for service.” Beginning as a pop-up out of the chefs’ office in Los Angeles in 2017, Sushi By Scratch Restaurants now operates ten speakeasy-style sushi outposts with its Montecito, CA, location receiving its first Michelin star in 2021 and again in 2022.
On menu is Sushi by Scratch Restaurant’s immersive 17-course nigiri tasting —showcasing fish and shellfish primarily flown in twice a week from Tokyo’s world famous Toyosu Fish Market and A5 Wagyu sourced locally from Iron Table Wagyu out of Gatesville, TX —all of which were inspired by the omakases enjoyed by the Lee’s over the years and beloved at its flagship locations since inception.
